Kimchi Miso Noodle Soup (Serves two)
Ingredients:
1 tbsp sesame oil.
2 garlic cloves, minced.
1 tbsp fresh ginger, grated.
2 tbsp miso paste.
3 cups veggie broth.
1 serving of rice noodles or soba.
½ cup mushrooms (shiitake or chestnut).
2 tbsp Jones Trust Your Gut Kimchi.
A handful of spinach or pak choi.
Optional: soft-boiled egg, spring onions or sesame seeds.
Method:
Sauté the garlic and ginger in sesame oil.
Whisk in the miso and broth.
Add the mushrooms and noodles then cook until tender.
Stir in the greens, top with kimchi and any optional toppings.
